A slice of light and fluffy Greenie (green brownie) with a deep matcha flavour. Based on coconut flour, white chocolate and whipped egg white.
More light and cakey than a dense brownie. If you love matcha, this the one for you!

Note: Gluten is present in the kitchen. Although it is not a direct ingredient, there is always a small chance of a trace amount.
Why do we make brownies/greenies?
We make a lot of custard for our melon pans (this takes lots of egg yolks) and it seemed such a shame to have no use for the egg whites, so we invented this recipe to use the egg whites! Initially we did a Gluten and a Gluten Free version, but people preferred the Gluten Free.
